I have uploaded several from my recipe collection. The one I use most is a variation on the Better Homes and Garden Pink Plaid Cookbook 1954. The only change is a little more vanilla and a drop lemon extract -- a trick my baby sitter Rosie taught me. I really like recipes with buttermilk, the buttermilk provides a nice tangy taste plus gives the other ingredients more lift. The trick also works on boxed mixes as well also add the water slowly. Some mixes don't need all the water in the directions. Flour takes on water the longer it is opened making the proportions vary. The last tips, is don't over beat; let the batter rest about 15 minutes in a cool spot; use a very hot griddle with a little oil (water drops should sizzle and evaporate quickly); and don't turn until the bubbles appear and that should be quick, otherwise a tough pancake is formed. http://foodsafetyfundamentals.net
